An indulgant dessert recipe, created to use up and avoid wasting cereal nearly past it’s expiry date. This dessert is creamy, crunchy and delectable, a scrumptious treat which is easy and quick to make in small or large quantities. The perfect ‘friday-night-in’ pick me up, or a delicious dinner party pud.
No Bake Strawberry Cheesecake Cups

A fresh yet indulgent summer dessert using otherwise wasted cereal, with glorious strawberries cushioned by a fluffy cream cheese mixture. Easy and quick to make, the recipe is perfect for a girls night in, dinner party or a sweet treat at summer BBQs
Ingredients
1 Tsp Vanilla Extract
4 Tsp Icing Sugar
200g Cream Cheese
200ml Double Cream
200g Crunchy Granola
4 Tbsp Strawberry Jam
16 Strawberries (approx)
Mint leaves for decoration (optional)
Directions
- Add the cream cheese, double cream, icing sugar and vanilla extract to a bowl and whisk with an electric mixer or hand whisk until combined and smooth. The consistency should be thick, like clotted cream.
- Time to put all the elements together. Take your small glasses or jars and add granola to each about a centimetre deep. On top of that add cream cheese mixture about 2cm deep. Slice strawberries and place them around the inside of the glasses above the cream. Add another layer of granola and another layer of the cream cheese mixture.
- To a small bowl, add the jam and a tsp of water. Mix the jam to create a pourable jam sauce, adding extra water if needed. Add a tbsp of jam onto the cream in each glass.
- Place in the fridge to keep chilled until time to serve.
- Decorate with chopped strawberries and a sprig of mint.
